Breakfast Quesadillas



Ingredients

4 soft-taco tortillas
2 eggs
pinch of salt and pepper
1/4 cup black beans
1 avocado, sliced
1 cup sharp cheddar cheese
1 tablespoon butter
sour cream and salsa for dipping

Instructions
  1. Spray a small, microwave safe bowl with nonstick cooking spray. Crack eggs into bowl, sprinkle with salt and pepper, then whisk with a fork. Microwave in 30 second bursts, removing and stirring the eggs between each segment of cooking, until fully cooked and scrambled.
  2. On each tortilla, layer the eggs, a few black beans, a thin slice of avocao, and a bit of cheese. Fold in half, coat the outside of the tortilla lightly with butter, then cook in a grill pan heated to medium heat. Cook on both sides until golden brown. Serve with salsa and sour cream for dipping.
